McVities or sometimes store brand ones. The digestives back home are all so good. I 😊

Oh, yes: Banoffee Pie really is lovely; and needless to say, that one you showed/demo'd making there looked fabulous...! In England we'd most prob have used/would use crumbled McVittie's Digestives for the crust, of course [ ... ({; D : i'm - 'roughly' - 2/3 ( ? ) Irish, with English and French/Belgian as well, born in Manchester and raised in (Borough of Ealing) London actually, but living now in NYC ] ; doing the caramel certainly is the dodgiest bit about it all i suppose - the amount of/all the stirring and that, i mean ({: \ / ({; D ...! The 'finished product' does make it pretty much well worth the effort though, truly!!

Just for the base Grainne, how much butter is in the bowl at the start when you pour in the blended biscuit? And then when you have it the spring form pan, do you just let it harden naturally or does it need to go in the fridge? Thanks in advance
