This is the second video in my journey to lose weight on the Mediterranean Diet. I am LOVING it so far, I get to eat my bread, rice, quinoa etc. and I feel so much better.

Mediterranean Quinoa and Chicken
3 Zucchini/Courgettes
4 Peppers, red, yellow or orange are best
Large red onion
Lemon Pepper Seasoning (or what ever you prefer) I used a garlic and pepper seasoning and a fresh lemon. It was absolutely delicious.
Quinoa
Chicken - coat in seasoning, brown on pan with olive oil for 10 mins, cook with vegetables in oven for 20 mins
Feta Cheese
