Brings me back to my childhood, watching my uncle carve up fore- and hind-quarters of beef on the wooden block in his butcher's shop. Well done sir; it's always a pleasure watching a master at work.

People who critisize never seem to be able to ever back up their mouths, they won't put up any vids! very good info here , and camera, if you did it any faster how would we novices be able to learn? We all have to learn, well all except the big mouths they were born with their skills obviously!

not bad, not great if you want t-bones. would have gone to the beginning of the lumbar vertebra and cut through the spacer, that way minimize sawing. But over all good video, and good angles on the action

Why did you remove the suet before filming

The suet is taken out by removing the kidney at slaughter. 1) The factory sells the kidney. 2) They suet could weigh 5-7kg. At €4.00 for a side of beef that is a lot of money in the bin.
