Got it wrong the first two times but third time's the charm! Tasted almost exactly like the salad dressing I ordered from Benihana for reference. This guy is spot on and it was my own fault for the sauce not turning out right. Turns out there's a BIG difference between using seasoned and unseasoned rice vinegar. I also got serious about the third time and used a kitchen scale to measure things out. If you're going for exact, don't accidentally get tomato sauce (similar size and packaging as the paste) like I did. The first two times were a little sweet so the last time I used half the sugar (just a teaspoon and a half) and that solved it. Last but not least, consistency is everything! I blended everything together and the tiny bits of ginger were almost overpowering, causing me to blend it way too much. I solved it by blending everything except the onions into a watery liquid, then added the onions last and pulsed it for a few seconds. I have finally achieved salad dressing nirvana and use this to encourage myself to eat more healthy greens 🙂

Hi there! I’ve also had some struggles in my first few tries. Would you be willing to share your weighted version with me? Mine is still coming out a little too acidic and sweet. Something is off in the flavor and I cant seem to get it right. As a fellow ginger dressing fan, I would really appreciate your help too!

@@binki4229 I'll try, here's a few suggestions. One thing I had to do was making sure I used the kikoman brand soy sauce and to use actual fresh ingredients which means skipping out on the pre processed ginger and lemon juice. Another thing I would say is that every restaurant does things a little differently like mine who's head chef personally told me he changes the recipes up like doubling the ginger and lemon, etc so your reference could be different than what is in the video (try asking your local chef like I did). I think your problem might lie in the type of rice vinegar which can be tough because the Walmart stuff is garbage so try to find an Asian import market and then make sure you get the "unseasoned" stuff. Hope that helps!

Jason, I just made this for dinner tonight. Greatly appreciated. You know what would be really helpful is including the weights of everything. E.G., 1/2 cup diced onion (26g), 1/4 cup water (60g), etc. That way when creating, you just tare your digital scale and start adding the proper weighted quantities. I asked Siri how much a 1/2 cup of onion weighs and she said 26g. I'm skeptical of that because the diced onion seemed like way less than 1/2 cup, so I added more! I really love your channel and hope the almighty algorithm pops you to 1M+!!

Love this recipe and video! One suggestion: you said "remove the stem by making diagonal cuts, just like this" but the camera angle makes it hard to see exactly what you mean. I know that camera angles, especially when using knifes, is a dangerous business, so I don't fault you for that. it would have been helpful to have a shot of the lettuce after its been chopped to get an idea of what its supposed to look like, or where the cuts should be, post-cutting. I know, its a nit-picky thing, but beginners that are fueled w anxiety like me would appreciate it so much. Great video as always!

Did you used to work there? I love this channel I just found. Especially the detail like the exact brands they use and how they cut their lettuce. Also I ate at one of these places and told them I'm allergic to gluten and I understand why it took a long time to bring me food, I think they made a salad dressing just for me with gluten free soy sauce.

These recipes in their original form are time capsules. These are very westernized recipes (in the use of ingredients and techniques) from a pre-Nouveau Cuisine era, trying to make the most of Hibachi leftovers to maximize profit and fit a three-course mindset. Man, what a cool channel.

Hi, Diane! The recipe for the ginger sauce is on my channel or you can find it by searching “Benihana Ginger Dipping Sauce Recipe” on KZitem. I don’t have the the spicy sauce recipe, but I’m going to get it from my friend that works at Benihana. I’ll make a video as soon as I get it from him. For teriyaki, I always use a recipe from Morimoto (because I think it’s better than Benihana). The recipe is 1/2 cup soy sauce, 1/2 cup mirin, 1/2 cup sake, 1/2 cup sugar, 1/4 cup chopped onion, 5 thin slices peeled ginger, 2 small garlic cloves (lightly crushed). Put all ingredients in small pot and simmer for 8 minutes. Strain through a fine mesh strainer. Then thicken with 1.5 teaspoon corn starch mixed in 1.5 teaspoon water. Mix both with teriyaki sauce and bring to a simmer for a few minutes until thickened. That’s the best teriyaki sauce I’ve ever tasted. Thanks for the comment! I appreciate you!

do you think they use the shark skin grounder on the ginger like wasabi? I feel like the ginger seems more grinder vs chopped?

Hello! I think the shark skin thing is only used for real wasabi root. In Japan, they do have a specific ginger grinder thing that kind of looks like a mini microplane grater. But in Benihana, they are definitely using food processors. If you're concerned with the texture of the ginger, I would use a microplane. That's definitely going to be your best bet! Hi, Alisia! Yes, I have the actual recipe from Benihana and it lists peanut oil as the oil. Really any neutral oil should work though. Vegetable, canola, grape seed, etc.

@@binki4229 Hi! Yes, this is the exact recipe from the Benihana corporate book. I have a friend that works at BH and he gives me the exact recipes. I've scaled it down for home use, of course. You can, of course, replace peanut oil with any neutral oil and it should be fine. You've messed up the ratios a bit and left out two ingredients. 1/2 cup - Yellow Onion (minced) 1/2 cup - Peanut Oil 1/3 cup - Unseasoned Rice Vinegar 2 Tbs - Water 2 Tbs - Ginger, Fresh (minced) 2 Tbs - Celery, Fresh (minced) 2 Tbs - Ketchup (yes ketchup) 4 tsp - Soy Sauce (light is better) 3 tsp - Sugar, Common 2 tsp - Lemon juice (squeezed from a fresh lemon) 1/2 tsp - Garlic, fresh (minced) 1/2 tsp - Salt, (sea salt works best) 1/4 tsp - Ground Pepper Blend until well pureed. Will keep for up to a week, shake as needed to re-incorporate the oil and water. Your welcome!!

So I just made this dressing and it's fantastic. Thank you so much for sharing it! I used unseasoned rice vinegar, tomato paste, and half the amount of recommended sugar. Also a pinch more salt. I omitted the oil to reduce the calories. The dressing is thick and you don't really need the oil. It's so yummy!!! I am looking forward to trying some of your other recipes.

Magnificent video, do you have any thoughts on the perfect vegetarian pho broth? Because we cant boil down the meat bones like typical pho broth base(because veg). Followed measurements..exception i used ginger paste since i had it in my frige. Mine came out strong onion flavor?? My rice vinegar says "organic rice vinegar " how can i tell if its unseasoned? So ginger paste or organic rice vinegar got this off track

Hi Jason - I can't thank you enough for posting this awesome recipe! I've taken this delish recipe (my neighbor also loves it) and adapted it as per below tweaks: -chopped white onion - I use red onion for additional antioxidants -peanut oil - I use half Macadamia nut oil (70% monounsaturated fat) and half MCT C8 oil -water - I skip this as I find the dressing clings better without it -chopped celery - I skip this as I usually don't have any on hand -soy sauce - I use coconut aminos as it's more low carb friendly -granulated white sugar - I use allulose as more low carb friendly -salt - I use Thai Fish Sauce in place of salt for the umami boost All the rest is the same and it is the bomb! Thank you again!

None in the dressing, but there are shredded carrots in the salad!
