Kala Chana Chaat Recipe Street food At Home
Ingredients:
4 tablespoons black mustard seeds
1 cup oil
7 large onions, sliced
2 tablespoons ghee
12 whole fresh green chilis
1 tablespoon salt
1 tablespoon Kashmiri chili powder
1 tablespoon turmeric powder
3 tablespoons danya jeera (coriander-cumin) powder
4 tablespoons garlic paste
4 tablespoons ginger paste
2 kilograms black chickpeas (canned or soaked and boiled)
2 tablespoons garam masala
500 grams boiled potatoes, chopped
Fresh coriander leaves, for garnish
Lemon wedges, fried filo pastry, or pomegranate seeds for additional garnish (optional)
Instructions:
Cooking the Onions and Spices:
Heat a large pan over medium heat and add black mustard seeds. Once they start popping, pour in the oil and swirl it around.
Add the sliced onions to the pan and fry them until they become translucent, which should take about 15 minutes.
About halfway through, add ghee to the onions for additional flavor.
Toss in the whole green chilis and give everything a good stir.
Sprinkle salt, Kashmiri chili powder, turmeric powder, and danya jeera over the onions. Mix well to evenly distribute the spices.
Add garlic paste and ginger paste to the pan, continuing to mix thoroughly.
Adding Chickpeas and Potatoes:
Once the spices have melded with the onions, add the black chickpeas to the pan and fry for 5 minutes.
Sprinkle a dash more salt over the mixture and mix well before frying for an additional 5 minutes.
Add the chopped boiled potatoes to the pan and mix everything together.
Let the mixture cook for another 5 minutes to allow the Flavours to meld.
Final Touches:
Sprinkle garam masala over the mixture and give it one final stir.
Garnish the Kala Chana Chaat generously with fresh coriander leaves.
Optionally, serve with lemon wedges, fried filo pastry, or pomegranate seeds for additional flavours and texture.
