Serves 4
Ingredients:-
1kg chicken breast chopped into bite size pieces
4 onions (chopped)
3 chopped tomatoes
1 green pepper (chopped)
4 cloves chopped garlic
1tbs chopped ginger
1tbs ground cumin
1tbs ground coriander
1tsp ground turmeric
2tsp chili flakes
Bunch of fresh coriander. Stalks and leaves separated.
4tbs oil
1 squeeze honey
Salt to taste
Method:-
Heat 2tbs oil in a large frying pan and add the onions (reserving half an onion for later)
Sauté for about 5-10 mins until soft.
Then add the garlic and ginger, sauté for another min and then add the spices. Sir well and add a
little water if the mixture looks dry.
Then add the tomatoes. Stir well and then turn on a low heat, cover and simmer for 10 mins.
Ensuring everything is well cooked turn into a food processor and blend until you have a thick
fairly smooth sauce. Add the coriander stalks and blend again
Meanwhile place the rest of the oil in the pan and add the chicken pepper and remaining onion.
Sauté for 5 mins and then add the sauce. Turn on to a low heat, cover and simmer for 10 mins
Test for seasoning, add the squeeze of honey and coriander leaves. Stir well.
Serve with rice and flat bread
