When I’m stressed I’ll go for snacking. Pita chips, carrots and hummus, any small salty bite size mindless eating. Satisfying but pretty horrible. Puts on the pounds, too much salt, making eyes puffy after sleepless nights. Now I’m fully vaccinated! Trying to get some discipline back. I found the air fryer nice tool for string beans, cauliflower, sweet potato sticks. Monitor oil and salt 👍 still get satisfying crunch. Now checking out salads. That cilantro lime dressing looks fab haven’t made it yet but look forward to it. Be well.

I didn't gain weight due to COVID but did quit those horrible addictive ECIGS and gained 12 lbs. I have been the same weight my whole life and now that I am older its harder to lose so I want to eat more salads. Thanks for the recipe.

I'm over 60 days of the 90 days of the salad diet & the weight seemed to come off slowly. I thought I was so heavy that I haven't weighed myself bc I wanted to stay upbeat. I have come to appreciate it's not about the weight, though. I am really off of food as marketed product which is a blessing. It's hard to tease me with fat/sugar/bread these days. I believe that I will be down 30 in the remaining 25 days as I can see my body becoming it's real self again. Bless you, Geoff!! Your unpreachy approach really hooked me and got me to change.

I appreciate this and hope you'll make different flavors of salads akin go this one. I got into great shape in the autumn and backslid a bit in the holiday season. Since you have been inspiring me to bake more, I’m really appreciative to see this salad recipe. And, there is no unreasonable quantity of cilantro - I love it. Also, my husband is dairy free (and gluten free, ugh, but I love him) so the chickpeas base of this is perfect. Looking forward to trying it this week.

Hi Geoffrey Try pan frying your pine nuts in a fry pan until they start to brown. Nothing is put in fry pan. Watch as they will brown fast. They will enhance your salad a ton. Enjoy.

I love your salad. The dressing looks delicious too. Very different from oil and vinegar like I usually have. I also like that you cut all the vegetables up in very small pieces. It to me, makes it much more appetizing. I’m going to try it not so much to lose weight, because I’m good right now. But because it’s really a lovely looking salad and that and the dressing look very nutritious. Thank you for the recipe.

I attempt to maintain my weight with big salads with a simple EVOO and balsamic vinegar. I used my garden greens until late December. Leaf lettuces and arugula. As a vegetarian, I use fresh mozzarella and fruit in my salads. I’m also into baked Japanese sweet potatoes, dates, berries, shallots, and freshly toasted pecans. I throw it all into a bowl, but mix my dressing with the shallots and cheese and let it sit until the veggies and fruit are prepped. I add fresh pineapple if I have any, but pear, apple, and fresh clementines work. While I love English cucumbers as a snack, I typically don’t put them into my salad, nor do I include my amazing tomatoes. Just my preference.

Cilantro tastes like soap to me, do you recommend a replacement in the dressing, maybe parsley? Oh and I love my OXO bowl and chopper! I've had it for a couple of years, and it is such a time saver!!

I’m obsessed with the oxo salad bowl! Parsley would be a good substitute for cilantro - you’ll want to dial the quantity back slightly since parsley is a bit harsher. Mint would also be a nice option (either alone or with the parsley).

I love how quickly you make the salad by having your ingredients prepped ahead of time, but I worry about the loss of nutrients from them being cut up. How long do you expect them to keep? I saw in your other video that you prep once a week. So they are o.k. after 6 days? Do you do anything special to keep them fresh?

I try to use it within 4 days. I'm not sure what the "official" safe-by date is, but when I worked in restaurants, many prepared foods like dressings, etc. had a 3-4 day shelf life.

I think under normal circumstances this would be sustainable. But throughout the pandemic, I’ve been struggling to eat this way consistently (e.g.: ordering more takeout to help the restaurant workers, and miscellaneous comfort foods to make myself feel better) and have gained back 15-20 pounds. I’m really frustrated right now, but trying to get back on track.

2 big salads plus a green smoothie every day. It’s 1800 to 2000 calories a day based on what I eat. But depending on you needs you can eat more or less. The goal is to eat veg until your full. The Eat to Live way of eating doesn’t mandate calorie counting.

I generally try to use it within 4-5 days (which is easy to do with how many salads I eat). It'll probably last for longer, but I don't have a way to test for safety, so I am overly cautious.

I can't eat garlic, onion, or any others in the allium family. What could I substitute for them in this recipe (and in your hummus recipe!). It's been difficult to give them up after sixty years of being able to use them!!

Giving up alliums is rough! In both recipes, you can just leave them out; there’s not a good substitute for either in their raw state (for cooking you could substitute with fennel or celery). The hummus recipe has enough other flavors that it will still be quite tastyWith the omission. This dressing may feel a bit flat with just the Italian seasoning though. My cilantro lime dressing would work well without onion or garlic (on the Santa Fe salad video). It’ll just have a cleaner and brighter flavor. On Monday I’m doing a Chinese Cabbage & Mandarin Salad with a dressing free from alliums. I added green onion to the salad base, but those could easily be skipped. In general, east/southeast Asian style recipes (very broad term as there are many cultures and cuisines in the region) are easier to make without alliums as they’re generally added at the end of a recipe vs as the foundation like European-style recipes.

I would love if you would try to copy cat Amy's Kitchen entrees like the enchiladas. I can't find anything like them and I would rather eat those than at Chipotle lol, but they are expensive and contain oil.
