This Japanese Mule with pear green tea ice cubes and ginger beer is a delicious twist on the traditional Moscow Mule.
JAPANESE MULE COCKTAIL

INGREDIENTS - COCKTAIL
2 oz citron vodka
½ oz fresh lime juice
5 cucumber slices
60 ml ginger beer
Mint sprig for garnish
INGREDIENTS - PEAR GREEN TEA ICE CUBES
2 cups water just under boiling temperature (75-85 degrees Celsius)
2 tablespoons pear green tea
4 slices cucumber
PREPARATION - GREEN PEAR TREE ICE CUBES
Steep the tea in hot water for 2 - 3 minutes then strain and pour into large ice molds (don’t over-steep the tea as it becomes astringent).
Add a cucumber slice to each ice mold for visual effect.
Place in freezer for 12 hours or until frozen.
PREPARATION - COCKTAIL
Muddle cucumber slices into cocktail glass.
Add remaining ingredients with ice (except ginger beer) and shake, shake, shake!
Pour ginger beer over the pear green tea ice cubes in a tall glass and double strain the cocktail on top.
Garnish with a mint sprig.
