It is when you steer your board upwind to get extra tension to jump higher

I would say, edging is to dig the upwind side of the board (the side where your heel point when you ride heelside, which is probably what you are doing when you are learning) into the water. You establish this by pushing on your heels (or toes on toeside) into the water,and even more so for the back foot than the front. In other words, your weight is more on your heels than toes, and more on the back foot than the front. When you do that, you will be able to ride upwind. As Daan mentioned, and as this video shows, it is also essential to pop and jump.
