Pav Bhaji Recipe
Serves - 4
Ingredients-
4-5 No. Garlic Cloves | लहसुन
2 No. Dry Kashmiri Red Chilli | सूखी कश्मीरी लाल मिर्च
1 No. (Sliced) Carrot | गाजर
1 No. (Diced) Potato | आलू
1/2 Cup Green Peas | हरे मटर
4-5 Florets (Blanched) Cauliflower | फूलगोभी के फूल
1 Cup (Chopped) Cabbage | पत्ता गोभी
2-3 No. Green Chilli | हरी मिर्च
1 Tsp Salt (As per Taste) | नमक स्वाद अनुसार
1/4 Tsp Turmeric | हल्दी
1/4 Tsp Red Chilli Powder | लाल मिर्च पाउडर
250 ml Water | पानी
1 Tbsp Clarified Butter | देसी घी
2 Tbsp Butter | मक्खन
1 Inch (Finely Chopped) Ginger | अदरक
1 Medium (Finely Chopped) Onion | प्याज
1 Small (Finely Chopped) Capsicum | शिमला मिर्च
2 Medium (Chopped) Tomatoes | टमाटर
1 + 1/4 Tsp Salt (As Per Taste) | नमक स्वाद अनुसार
1 Tsp Coriander Powder | धनिया पाउडर
1/4 Tsp Red Chilli Powder | लाल मिर्च पाउडर
2 Tbsp Pav Bhaji Masala | पाव भाजी मसाला
Water as Required | आवश्यकतानुसार पानी
2 Tbsp (Optional) Butter | मक्खन
1 Tsp Dry Mango Powder | अमचूर पाउडर
1 Tbsp (Chopped) Fresh Coriander Leaves | ताज़ा हरा धनिया
2 Tsp Lemon Juice | नींबू का रस
1 Tbsp Butter for Pav | पाव के लिए मक्खन
Method-
In a small bowl garlic and dry kashmiri red chillis and soak it in hot water for 15-20 minutes
Now in a pressure cooker add sliced carrot, potato, green peas, blanched cauliflower, cabbage and green chillis. You can also add a little beetroot for color here if you want
Now add salt to taste, turmeric powder, red chilli powder and a glass of water
Close the lid and pressure cook it for 3 whistles on medium heat
Let the cooker de-pressurize naturally and then open the lid carefully and check the doneness of veggies
Now take your soaked garlic and kashmiri red chilli and add it into a blender jar along with the soaked water
Blend it into a chutney like consistency, this will give a bright red colour and street style taste to our pav bhaji
Now heat a big tava or a pan on a low heat
Add ghee along with butter and finely chopped ginger and stir well
Now add finely chopped onions, stir well and let it cook for 2 minutes on medium to low heat
After 2 minutes add finely chopped capsicum, stir well and let it also cook until soft
When the onions n capsicum are soft but still have a bite add prepared garlic and kashmiri red chilli paste
Stir well and let it cook for 2-3 minutes, keep stirring occasionally
Now add chopped tomatoes, salt to taste, coriander powder and spicy red chilli powder and mix everything well
Let the tomatoes cook until soft on a medium to low heat
When tomatoes are soft add all the pressure cooked veggies into it and also add pav bhaji masala
Now using a potato masher start mashing the veggies while cooking on low heat
Mash the veggies very well while mixing, no large chunks of vegetables should be visible
When the veggies are mashed well adjust the consistency of the bhaji by adding hot water
Let it cook and bring it to a boil
Add some more butter and dry mango powder and stir well
Adjust the salt as per your taste, here I'm adding 1/4 Tsp of salt here, and mix well
Towards the end add fresh coriander leaves and squeeze some lemon juice
Stir well and switch off the heat
Your bhaji for pav bhaji is ready, now let's make some butter pav
Heat a tava, slit the pav in half as shown and spread some butter generously
Cook the butter side down on a hot tava until golden brown
Apply some more butter on the top and flip, pav are also ready
Serve the hot Pav Bhaji with some extra butter, onions and slice of lemon
