Its a gorgeous system! My only two concerns are the following: 1) the wort being recirculated in the bottom vessel is completely exposed to the air. If you are someone who cares about hotside aeration this is a concern. If HSA isn't a concern for you then its no problem. EBIAB single vessel systems have similar HSA problems from the wort dripping out of the malt pipe or basket. An improvement to the design could be for the return pipe to be longer so its completely submerged 2) since you have to dough in for 15 min prior to recirculation then your PH will be different the first 15 min vs. when until you mix in the remaining full volume. This can be addressed for lighter beers by adding different lactic acid amounts at both stages. Trickier with darker beers though where the acidic roasted malt is already added at dough in. Perhaps reserving a portion of the roasted grain for after dough in could address this

would this allow me to step mash? 50°>62°>68°>76° - like the Grainfather, RoboBrew, Brewtools? You know we europeans seem to be obsessed with step mashing - although US craftbrewers seem to brew the most amazing beers in mash tuns. Looking for a replacement of my Robobrew in the future, and dont wnat to give up the posibility of step mashing

Absolutely. Most systems with a heat source and wort recirculation is usually capable of performing step mashes. The BrewCommander actually has a program to perform this.

How can you heat your mash ?? There is no recirculation because unter its strike water i belive ?? If you recirculate for mash out you have to use the strike water ... look weird to me !!!

I am looking at this system. Why do most people prefer 3 vessel systems? This looks simpler. Is there a disadvantage to doing 2 vessel system?

The main disadvantage of brewing on a 2 vessel system compared to a 3 vessel is your efficiency (the amount of sugar you pull from the grain). The BrewEasy offers many features including easy cleanup, small footprint, and automation that we feel outweighs the disadvantages of a traditional 2 vessel system. This paired with our BrewCommander controller really lets you dial in your recipes for precision and easy repeatability. Cheers!
