In this video, I show you how to brew a Munich Dunkel at home using a double-decoction process. This beer has rich malt flavor with notes of toasted bread and subtle chocolate. I love this beer for any time of year, but there’s something special about this one during the Fall/Winter months. GRAIN BILL
80% Munich
20% Pilsner
*Add 5% (0.5 lb / 0.23kg) Carafa III at sparge.
HOPS
Hallertau Mittelfruh (28g at first wort)
Hallertau Mittelfruh (28g for 70 mins)
YEAST
34/70 (23 grams dry yeast or 2 packs of liquid yeast)
PROCESS STEPS
Optional protein rest at 130°F (54°C) for 10 mins
Beta rest at 145°F (63°C) for 30 mins
Decoction 1: Remove 1/3 of the mash with strainer (linked below) and boil for 20 mins.
Alpha rest: Add decoction portion back to the main mash and hold at 160°F (71°C) for 10 mins.
Decoction 2: same as previous
Mash out: Add decoction portion back to the main mash and hold at 168°F (76°C) for 10 mins
Vorlof 5 mins.
Boil for 90 mins.
Ferment at 50F.
Crash the fermenter 2°F every 12 hours until 36°F (2°C) is reached. I like to purge the flocculated yeast every 2 days during the first few days of crashing.
Lager at 36-38°F (2-3°C) for 6-8 weeks.

DECOCTION:
Boiling a portion of the mash (about 1/3) creates additional Maillard reactions which contribute delicious flavors to malty beers like this. A Maillard reaction is the same thing that happens when you toast bread or roast marshmallows.
When mashing, the enzymes needed to help break down the components in the grain are mostly located in the liquid portion of the mash. When we do a decoction, the goal is to remove mostly grain so that the enzyme-dense liquid stays in the mash tun. However, you’ll need a little liquid in the decoction portion so that you don’t burn your grain when boiling.
pH MEASUREMENT:
Taking pH measurements is an important part of brewing beer. The main reason to cool pH samples to room temperature is for consistency. Many pH meters have automatic temperature correction. However, this does not account for the change in pH at different temperatures. A pH measurement at room temperature will be roughly 0.3 lower than a sample measured at mash temperature. Although this may seem like a small difference, pH is a logarithmic scale (huge differences for small changes in pH). Cooling your pH samples also helps reduce the thermal stress on the small parts in your meter.
YEAST NUTRIENT:
This is totally optional. Honestly, it doesn’t do much and it’s just cheap insurance for a healthy fermentation. All-grain mashes like this have all the nutrients needed for proper fermentation, with the exception of zinc. I still like to add it since I use reverse-osmosis water.
OXYGENATION:
Adding pure oxygen at a flow rate of 1 liter per minute for about 90 seconds will provide an adequate supply of oxygen (10-15 ppm). A rotameter (link above) will allow you to measure the flow rate of the oxygen.
