salt and pepper = I would say 1 part salt to 2 parts pepper
let sit in refrigerator over night or 12 hours
Brine
dissolve 1 cup sugar with 1 cup salt in water.
let cool pour over butt and then cover with cold tap water. soak 12-24 hours
this is for one 10 lb. butt. double if using 2.
