I'd love to see a video where you try to determine the different depths of smoke penetration that you achieve with your different cookers. I'm envisioning a thick cut of meat like a pork butt seasoned simply with salt and pepper. Cooking them on each of your cookers and then blind tasting parts from the outside toward the inside of each piece to see if the smoke actually gets in deeper with the offsets.

Smoke barely penetrates the surface of the meat, perhaps by just about 1/8". The quality of smoke from an offset smoker, the nuanced and richer aroma may be translated into a deeper smoke flavor, thus giving us the perception that the smoke penetrated deeper into the meat. Another myth is people prefer to use coarser granulated spices as compared to powder, so not to block smoke penetration into the meat. As a hypothetical example 10 grams of granulated garlic has less surface area than the particles in 10 g of garlic powder. Garlic powder will carry more smoke. Also smoke particles are smaller than the particles of garlic powder, smoke will get thru the powder and into the meat.

Before we moved I had an Oklahoma Joe reverse flow smoker that was very nice. A great feature is that you can move the stack and turn it into a regular offset if you prefer. The only downside was the firebox was a bit small for splits of wood.

Reverse flow smokers are the bomb. No having to rotate meat, temp stays constant. Been using my 18’ R-flow trailer / pit for close to 15 years.

Great video! really enjoyed it. I have both a pits by JJ custom offset and a custom Kats reverse flow offset and love them both. I have found I can get pretty similar results out of both but I gotta change the way i’m doing things. With the reverse flow I cook at a lower temp trying to stay at around 225 I feel like this is equivalent to about 260 ish maybe a touch more with the standard flow. The reverse flow is very easy to run and forgiving. I really enjoy both.

i did a brisket the other day at average 270 and i didn't get any tearing on the bottom, got a great bark and smoke.... i have yet to find a downside. on the upside, its about 10-20% faster

@@SmokingDadBBQ Very nice! yes that’s kinda what i’m talking about, with the reverse flow I’ve been running lower temp to really get the dark bark on brisket, but I run it at higher temps around 250 to 275 for everything else and as you said it speed up the cook. In all truthfulness I use my reverse flow more than anything. I’m thinking of cooking my next brisket closer to 275 and see how it does, thanks. Can’t wait to see more of your videos on this. On a side note I did cook some burnt ends last week and was in a hurry so I cooked them at 325 and the bottoms got a little tough.

I wish the smoker had a collapsible smoke stack. Those tall ones are tough when transporting the smoking. But I see it has bolts where you can remove it, so I guess no biggie. By the way, when is this one available, it’s not listed on the site. Keep up the good fight.

i don't get why some youtube creators are so hard on the reverse flow not being a "real" texas smoke..... as far as i can tell everyone who has one, says something like what you are saying so i am puzzled why the reverse flow hate? I did a brisket the other day for my next video, the rumour is bad bark, burnt bottom etc. and lack of smoke... not one of those "issues" came true. it was a great brisket To me, it seems that the reverse flow does better being shrunk down in size than a direct flow... i know this from when i had my 30g OKJ highland, the smaller the pit the more tricky fire management gets. Seems like a no brainer so far

@@SmokingDadBBQ I have used all kinds of cookers. I still have my Joe Jr. and Big Joe III. I switched from Team Green due to your videos. I have also used direct flow and had my cooker built by Shirley Fabrication. NOTHING touches it from a cooker stand point...Period. I wish I was as talented as you to show it on KZitem but I would challenge anyone to reverse versus direct flow cook off. An Idea for you...Have a blind fold test of reverse flow to direct flow to Big Joe taste test. That would be a fantastic video!! Thanks again for all of the entertaining video James!!! Keep it up. 👍

Do you get any fat smoke from drippings over the bottom plate? It will be interesting to see how it performs side by side with the Huron. As to smoke penetration, I suggest you cut a thick slice, at least 1 " thick, out a smoked brisket from its thickest part. Then slice in cross sections around 1/4" thick slices. Start by tasting from the center out till you taste any smoke. You'd be surprised to find out how little smoke penetrates.

It looks like your wood splits are smaller than a conventional offset. I have a Gen 2 offset. Is the reverse flow better on fuel?

How far away are the grates from the reverse flow plate on the echo? I have also read lots of comments of reverse flows lacking smoke compared to a traditional offset as well. Some speculate the thickness of the reverse flow baffle and the distance from the cooking grate can have an impact on the amount of direct heat coming from below.

i am going to do a ton of tests first.... but i am kinda wondering about a scenario of selling my huron and ordering a production version of this IF* it continues to do well on everything i throw at it. I did a brisket the other day and also saw about a 20% speed improvement and no issue with burning the bottom from the baffle or developing a great bark. If i did sell my huron it would be to get the rumoured trailer (250-500) they are making so then i would have a pit i can take places not stored at the house, and one pit at the house which is smaller in size and fits about the same.

@@SmokingDadBBQ Did you cook it on the lower or upper shelf? When Bradley at Chuds built his reverse flow and did some cooks on it, he was getting some of that issue on the bottom of the meats because of the heat under the baffles. Made me wonder if just moving everything to an upper shelf (like I do when I use my pellet grill) would be enough to solve that
