I have always liked dirty rice, and it's definitely been a Thanksgiving staple of mine for years. This is such an easy recipe to cook, and the brisket just takes the flavor up a few notches.
4C Cooked white rice
1# Breakfast sausage
1/2# Ground brisket or beef
1/2# Chopped brisket
8oz. dressing mix
1/2C Cooking oil, lard, or tallow
1 chopped yellow onion
1 chopped bell pepper
1 chopped stalk of celery
4 stalks of green onions, diced
1 clove of garlic, minced
1-1/2TBS Creole seasoning
1TSP chipotle powder
Precook your rice according to package directions. This can be done earlier in the day, or the day before Heat your skillet to medium heat, and add your cooking oil. Add onions, bell peppers, celery, and cook till translucent. Now add garlic, and cook for a minute or two. Add the ground meat, and breakfast sausage. Brown both till they're about half cooked, and then add the dressing mix, Stir hour thoroughly, and add your dry seasonings. Cook until all meats are almost done, and now add the chopped brisket. When all the meats are done and tender, turn off the heat. Fold in the cooked rice until evenly distributed. Finish it by mixing in the green onions. That's it, enjoy.
