Recipe:
Soba - 150g
Onions - 150 g
Carrots - 100 g
Bulgarian pepper - 150 g
Chili pepper - 15 g
Garlic - 15 g
Ginger - 10 g
Soy sauce - about 50 g (it all depends on the quality of the soy sauce, you need to add to taste)
Sesame oil - 10g
Chicken fillet - 200 g
Oyster mushroom - 300 g
Preparation:
We wash and cut the prepared vegetables, cut everything into thin strips, finely chop the chili pepper, ginger and garlic, the mushrooms into wide slices. This is to ensure that the vegetables are fried and still slightly crispy. It is convenient to make slices of carrots with a housekeeper, and then cut the slices into strips. In chili peppers, remove the partitions and seeds, they are very spicy. Just prune the garlic and peel it off. We clean the chicken fillet of excess fat and films, plast it into slices, then cut them into strips.
We collect water in a separate pan, preferably more. I add salt immediately.
We put the pan on the fire, heat it up, add oil. Then put onion, bell pepper, stir, then carrots. Move back the common frying a little, pour oil into half of the pan and add chicken. When the chicken is fried, do the same with the oyster mushroom. After that, push back the frying and fry the garlic, ginger, chili and add a little sesame oil. Then mix everything together and add the soy sauce. Soy sauce in this dish instead of salt, you need to bring it to taste or almost to taste, you can always add, even to a cold dish.
While the water is boiling on the noodles, we quickly make a decoration for the noodles: green onions, cilantro leaves.
Cut the onion feathers thinly at an acute angle.
The water has boiled, gradually introduce the noodles.
Cook for 4 minutes. We put the soba on a sieve. Cool slightly with running water and return to the frying pan. Gently mix everything together, try not to damage the noodles. Then we taste the noodles for salt, if necessary add a little soy sauce. Then we heat the fry with buckwheat noodles and serve. Decorate with sesame seeds, green onion feathers and cilantro.
