You have to try this soup, it is amazing. We are going through the Covid-19 virus so this is ideal to make now that most of us are at home. It is wholesome and delicious. It will keep in the fridge for up to 3 days, so you can enjoy a healthy lunch while at home.
Try it with my cheese scones
• Cheese Scones
Ingredients
1 Butternut Squash
2 Carrots
2 Small Parsnips or 1 Large
1 Medium Onion
1 Red Pepper or Jarred Peppers
Fresh Ginger
Garlic
Chicken or Vegetable Stock or Broth
Olive Oil
Salt and Pepper
Roast for 1/2 hour in 200/400 degree oven
Add to pot and add stock boil for 15/20 minutes. Blend in blender. Serve with sour cream
