Chipotle Inspired spicy channa and rice.
Ingredients:
Oil - 2 table spoons
Bay leaf - 1
Cumin seeds - ½ teaspoon
Mustard seeds - ½ teaspoon
Fennel seeds - ½ teaspoon
Garam masala powder - 1 teaspoon
Turmeric powder - ½ teaspoon
Sambhar or curry powder - 1 teaspoon
Garlic - 3 cloves chopped
Green chillies - 3 deseeded ( for spicer version leave the seeds in )
Ginger grated or paste - 1 teaspoon
One medium red onion chopped
2 medium tomatoes chopped
2 medium potatoes chopped
Choice of greens ( used local green chopped 2 cups)
Cilantro chopped ¼ cup
Chick peas cooked 1 cup
Dried Methi leaves (optional)
Ghee 1 teaspoon
Grind together:
Fresh coconut ¼ cup
Cashew 8 count
Water as needed
Directions to cook:
Heat oil in a pressure cooker
Add bay leaf, cumin seeds, mustard seeds and fennel seeds
Wait till it splutters
Add garlic, green chilies and sauté for a minute on medium flame
Add ginger paste and sauté for about 10 seconds
Add chopped onion and sauté until translucent
Add tomatoes and sauté until medium soft
Add turmeric powder, sambar or curry powder and garam masala powder and sauté for about half a minute
Add potatoes and chopped greens and cilantro and sauté for a minute
Add boiled chick peas and water and pressure cook for one whistle
Add coconut cashew paste and add water to adjust consistency
Garnish with methi leaves and ghee, Enjoy over steaming rice
