Using a skillet, it was easy to make a shrimp and avocado ajillo. Using the finished olive oil to top a baguette also tastes great.
Ingredients
・Shrimp: 8 or so
・Avocado: 1 half.
・Garlic: 1 clove
・Chili pepper: a pinch
・Olive oil: as needed
・Salt: as needed
・Baguette for garnishing
Instructions
1. Cut avocado into bite sized pieces. Slice the garlic.
2. Remove shrimp veins (the shrimp I used this time already had them removed).
3. Coat and gently rub shrimp with 1 teaspoon of salt.
4. Add enough olive oil to the skillet (or fry pan) to cover the ingredients. Increase heat.
5. Add garlic garlic and chili, cooking until they change colour.
6. Reduce heat and add avocado and shrimp.
7. Simmer for 1-2 minutes, then turn the ingredients over and simmer for another 1-2 minutes. Top with salt and adjust to taste.
