I grilled a boneless pork rib block over a charcoal fire, then I tried to smoke it in a fry pan. In this video, the meat block was too big and I couldn’t fully close the lid.
Looking at it now, I think it would better to completely cover it with aluminum foil instead of a lid.
*Warning: If you use a fry pan, it may stain and smell from the smoking.

Recipe
Ingredients
・Boneless pork rib block: about 100g
・Olive oil: as needed
・Salt: as needed
・Pepper: as needed
Instructions
1. Slice the pork into sizes that will fit in your pan, and make even cuts all along it to help it cook through.
2. Sprinkle pork with desired amount of salt and pepper.
3. Grill the pork, flipping as needed, until it is lightly burnt on both sides.
4. Line the aluminum foil on the bottom of the fry pan, and put some smoking chips on the foil. To keep the chips from touching the oil, cover the chips with another sheet of aluminum foil. Finally, cover with the grill grate.
5. Place the meat on the grill grate, and completely cover with aluminum foil. Smoke on light heat for about 30 minutes.
*It can take up to 10 minutes for chips to start smoking. Smoking over a longer time will taste best.
