*Ingredients:*
- 1 pound fresh figs, stems removed
- 1 1/2 cups granulated sugar
- 1/2 cup water
- 1-inch piece of fresh ginger, peeled and thinly sliced
- Zest of 1 lemon

*Instructions:*
1. *Prepare the Figs:*
- Wash the figs thoroughly and pat them dry.
- Cut the figs in half if they are large, or leave them whole if they are small.
2. *Prepare the Syrup:*
- In a large saucepan, combine the sugar, water, ginger slices, lemon zest, and lemon juice.
- Heat the mixture over medium heat, stirring until the sugar dissolves completely.
3. *Cook the Figs:*
- Once the sugar has dissolved, add the figs to the saucepan.
- Bring the mixture to a gentle simmer and cook the figs for about 45 minutes to 1 hour, stirring occasionally. The figs should become tender and translucent, and the syrup should thicken.
4. *Dry the Figs:*
- Preheat your oven to its lowest setting (around 200°F or 95°C).
- Using a slotted spoon, carefully transfer the candied figs to a wire rack set over a baking sheet to catch any drips. Reserve the syrup for later use.
- Place the figs in the oven and let them dry for about 1 to 2 hours, or until they are firm and slightly tacky to the touch. This step will help crystallize the figs.
5. *Crystallize the Figs:*
- Remove the figs from the oven and let them cool to room temperature.
