I find the same, as the ladies in my village helped me no end when I started my preserving adventures here. They water bath even low acid foods like meat and veg too but for a much longer time, which is borne out on the Le Parfait website/ KZitem channel. I've invested in a Presto Pressure canner as I was always a bit worried about water bathing low acid items, and I intend to trial "ready meals" like chilli and curry preserved in a pressure canner. I think with rising fuel prices that a shorter pressure canning time (for low acid foods) will offset the cost of my purchase. Thanks for sharing.

I've been making a apple sauce spice cake for years. The spices are cinnamon, cloves, and allspice. We don't icing it. Just eat a square with our coffee.

We invested in a fruit press a few years ago so any glut of apples or pears can be made into juice , it’s proved to be very useful in not wasting anything and as fresh pressed juices are expensive it’s paid for itself now , I think we paid £65 for it but it’s fab !

One of our apple trees went a bit crazy this year. We've picked about ten bushels from it, putting up twenty gallons of cider and a lot of applesauce and pie filling. Even after giving away a lot of apples, I still have another 2 bushels to get through and put into the pantry. I love your videos!

Additional tip: If you find boring to peel apples to prepare big batches of apple sauce, here is the recipe taught to my mother by a very frugal lady 50 years ago : quarter apples and put them directly in the pan with all except the tail, add a cup of water (to avoid catching). Boil until tender, blend with a stick blender and finally pass it through a sieve. The apple sauce is quick to prepare this way, and more tasteful at the same time, all benefits. I never prepare it another way since then!

I like the added benefit of the peel with this method and no waste! The peel has the highest amount of nutrients. I'd just remove the seeds due to the poison they contain when doing a big batch.

Apples are my favorite. I love to stew or make casseroles with peeled apples and sweet potatoes together adding a little brown sugar...butter and cinnamon. If I don't want to add sugar I'll use raisins instead. It is so very good.

If I had loads of apples I would also make apple butter and apple core & peel jelly. I do miss my fruit trees. I once had a neighbor that would leave tomatoes on our front step for us and we would give them a few Dungeness crabs when we caught enough.

We planted several fruit trees that will be producing in a few years. Until then we have been bulk buying apples and peaches. Grandkids treat! Pie filling, sauce and slices and a spicy mincemeat without meat. Apples, oranges, lemons sugar,, spices and raisins for a mince pie filling. Yummy.

I love to add chunky applesauce with cinnamon to my oatmeal in the Autumn and Winter. I also love to add diced cooking apples and some dried cherries along with celery and onion to boxed stuffing mix. It goes so well with chicken, turkey, duck and pork. Just a tip so it doesn’t happen to you. Make sure the cloths you are using in the bottom of your pot are color fast (the dye won’t come out in the boiling water). Years ago I used a cotton dish towel that was blue and the dye bled into the pot and ruined all the jars of applesauce. I was so upset because all my hard work had to go in the trash because I didn’t even think about the dye coming out of the towel from the water being boiled for 20 minutes while I processed the applesauce.

Lovely! We have ltos of Bramley aples so I've already sliced a load and bagged in the freezer. Despite using lemon juice as I repared them, they still started to brown, so not aesthetically pleasing, but who cares when, over the winter, they're going to be cooked with sugar and buried under a blanket of crumble anyway?! Apple sauce so useful as well, and pork is one of the cheapest meats here at the moment. Just need to track down some blackberries......

I have made apple cider vinegar using the peel and core of the apple and also i make apple jelly from the peels and core you can freeze the peel and then pull them out to make it when it is cooler and you have more inside time in the winter. I also have been re using the jars and lids just as you do for many years I boil the lids and the jars go in oven. Funny thing being half way round the world from where you are but still finding the same frugal ways

I'm roasting (then freezing) tomatoes as salad or pizza toppers. I'm dehydrating some tomatoes so I can crush it into a dust. I'm going to cut low carb wraps into biscuit size, spritz with olive oil, sprinkle with the tomato dust and salt and bake them as snacks, just experimenting!

Hi Jane - just watched this, and i do this every year, with the apples from my next door neighbour's tree. To sterilise the jars and the lids, I use a home brewing and wine making sterilising powder, which i get from my local homebrew shop. I therefore dont have to put them in the oven - risking them shattering if there are any faults in the glass - and i dont have to do the boiling/sterilising thing afterwards. I also use a 4-layer thick piece of cling film over the top of the jars before putting on the lid, as I have found that the acid from the apples, and also to some extent the lemon juice, can eat through some dodgy lids. I have jars of apple sauce going back 15 years - and they are still fine!!!

You can actually do that sterilisation process in a dishwasher if you have much more and you will have to cook them in pore batches 😊 that's what I'm doing to speedy the process

One item I have that is a game changer with apples is a table top apple peeler and it also cores it. Maybe keep an eye out at a charity shop (thrift store here). Also with apples they a lot of natural pectin so to make jelly you dont usually need to add it. From looking at the apple Here in US they are called granny smith apples. They are tart and yes not much liquid in them.

My gane changer is a food mill. Now I just have to quarter the apples, cook them until soft and run them through the food mill. If the sauce is too watery I then cook it down some more before eating or processing. A popular brand in the US is NORWEX.

For Apple purer to clean Apple there is a great thing -apple cleaner, you can find it in China or in lokal shops. I can provide with pictures

My mom and dad use to have a Bramley cooking apple and a Cox's eating apple. To keep the apples they use to just wrap the perfect ones only in newspaper and store in crates or boxes. The marked cooking apples was peeled and cooked for apple pie filling. The marked eating apples was either eaten or my dad used for wine making.

Only just got round to watching this one, but this is SO useful for me, as any jam I've ever made always goes furry within a couple of months, despite sterilizing everything. We have had no apples this year, combination of bad spring so no pollinators, and the drought in France. But have lots of crab apples, so I'll be trying crab apple jelly! And only 8 damsons, and 6 plums. Love the videos, I just wish I could go at that pace when you put it on fast!!😂

Not enough sugar? Not boiled long enough? Jam, the jars have to be 100°c and the jam when pouring in. Then sealed. If the lids pop down, you should be airtight.

Isn't it lovely to have jars of homemade food in the pantry. I am fortunate to also have a friend with several appe trees who invites my to come and pick and I love to make applesauce from the "flesh" and apple jelly from the skins and cores and am looking forward to picking the wild grapes in the woods behind my house to make jelly (far to tart ans seed filled for eating out of hand but great in jelly). I agree that is is odd that we Americans call putting up stuff in jars "canning" but that's the way it is. I believe that some people do actually store food in actual aluminum cans, but no one that I know does it. Enjoy your bounty and thanks for sharing.

We make apple sauce each year as we have several apple trees. We nearly always reuse jars as long as the lids look good. We always have to add some water. Mostly we cook them with the peel and press them through a sieve after cooking. We always sterilise the empty jars but not the filled ones. They last until next summer. I would love to learn some additional recipes to use apples.

Do you do anything with the peels? My mother would pick out the bad spots and cores then wash the peels. Then cook and then strain the peels to make apple jelly. Absolutely. However, I don’t do the end stage that Jane did when the sauce was in the jars (boiling the filled jars in water). I’ve just heated up the jars in the oven, sterilised the lids in boiling water but when I’ve made the jam or marmalade I fill up the jars to the very top so there’s no, or little air, whilst they’re still very hot, seal the lid tight and then if you wait you can hear the lids popping down. Only when they’re completely cool do I clean the outsides and store. Different methods and what suits you I suppose. My stock pot isn’t as big as Jane’s so a bit wasteful in energy for me to do that as I can probably only fit about 5 jars in mine at the most.

@@amayastrata4629 I nearly do the same as you, but I sterilize my jars in the microwave, I was the jars in hot soapy water, rinse under the hot water tap, put some hot water in the clean jars about 1 inch, I normally place 2 jars at a time in the microwave and put on high for 2 minutes. I put the lids in a jug of boiling water. I place the sterilized jars on a clean tea towel, fill the jars put the lid on and leave overnight, any that don't go down (button in the middle) get used. I use this method for anything I make e.g jam, chutney or pickles.

Thank you for this video Jane, I have always been a little nervous about trying this but it doesn't look at all daunting. May I ask what the correct temperature is of the water when sterilising the full jars?

Hi, when heating the bottles at the end, what temp did you keep them at for 30 mins, as a final step please?

I am confused because in the US we are constantly told we cannot can using recycled jars. Only use mason jars, lids and rings. I would love to use recycled jars because I have so many of them. How save is this?

Please make your own decisions as I’m not an advice channel. Here in Europe, they can not afford to be told what to use, we use what we’ve got.
