This video is about Canning Homestead Tomatoes in Juice!! Here I show you how to preserve homegrown tomatoes in their own juice for use in favorite recipes. This process isn't hard, but it does take some time to get the job done. Well worth the effort though!! Thanks for taking the time to see how this process is done! These tomatoes can be used in soups, for making homemade tomato soup, stews, and homemade pasta sauce. We go through a lot of these canned tomatoes each year, so I tend to preserve them in large quantities.
Peeling tomatoes before canning is important for a number of reasons, including:
1. Texture
Tomato skins are tough and hard to chew, so removing them ensures a smooth texture in canned tomato products.
2. Flavor
When cooked, tomato skins can make canned tomatoes taste bitter, so removing them allows the flavor to be at its best.
3. Pesticides
Removing the skin can reduce the amount of pesticides in the canned product, especially if using store bought tomatoes. We don’t use any chemicals on our garden produce and we still peel them for taste and texture reasons.
4. Bacteria and Spores
Peeling tomatoes can reduce the amount of bacteria and spores that end up in the jar, which can increase the safety of the product and reduce the likelihood of spoilage.
All canning books tell you this same information. We highly recommend reading one!

FAQ: What is the shelf-life of home-canned goods?
As long as the lids/seals are intact to the jars and there is no evident content spoilage (discoloration, foam, froth, malodorous, or any other obvious signs), they are good for many months or years. "Looks good, smells good, is good". We have eaten our home-canned foods that are upwards of 10 years old from the original processing date. When in doubt, throw it out.
FAQ: What happens if you don't sterilize canning jars before canning?
Sterilization of canning jars is not required for safe food preservation if the food item is processed for at least 10 minutes in a water bath or pressure canner. Any harmful microorganisms will be destroyed during the canning process (National Center for Home Food Preservation).
It is important to start with clean canning jars. Wash jars in hot soapy water, rinsing well leaving to air dry on a towel. You may also use a dishwasher to wash the jars. Inspect each jar before filling, looking for any cracks or chips to the rim, body, or bottom.
