Alex was Born in 1958 and bred in small village in Glasgow..He's been working now in various Chinese takeaways as a delivery driver for over a decade now.
Most of what he's learnt is just by watching the chefs.I've had no formal training but worked as chef in an Indian takeaway for many years also as a delivery driver but after constantly annoying the chef he let me cook a few things and eventually progressed to a chef.I only drive for them in the Chinese unfortunately but still learn loads.
Recipe
Veg
Beansprouts
Spring onion
1 med sliced onion
300 grams pre cooked flat rice noodles.I used fresh
230 grams thinly sliced topside beef
Method
Place the beef in a bowl and add 1/2 tsp bicarbonate of soda and 1 tbls water
Tenderise for 30 minutes then rinse in water and completely remove the bi carb
Now fully coat the beef in 1 tsp dark soy sauce and set aside'
Partially fry the beef in vegetable oil and then set aside per tutorial
Now add all the veg in the remaining oil and stir fry for 1 minute
Set aside
Next add the noodles
Season with
1 & 1/2 tbls dark soy sauce
1/2 tbls light soy sauce
1/2 tsp white pepper
1 tsp msg
Now return the veg and beef and toss through
Cook for 1 minute then serve

creating a smoky barbeque scent commonly known as Wok Hei.When i cook i'm imersed in that aroma.
