🟢材料:
新鮮鮑魚仔 8 隻
陳皮 1 角 (浸軟)
豉油 適量
油 適量
🟢步驟:
1️⃣ 將鮑魚仔略為清洗後,燒滾一鍋水熄火,放入鮑魚仔浸泡 10 秒,略為攪拌後撈起放入水中清洗。
2️⃣ 用牙刷刷乾淨鮑魚,鮑魚背部亦要刷乾淨,用小刀略界韌帶位撬開鮑魚(可選擇不開原隻蒸),去除內臟和鮑魚嘴,洗淨吸乾水。
3️⃣ 將陳皮切絲放鮑魚面,水滾下鍋,大火蒸 3 分鐘。
4️⃣ 灒熱油和豉油即可享用。
📌備注:以影片中鮑魚大小而言,水滾落鑊大火蒸3分鐘,鮑魚較大時間要略為增加,買鮑魚時可向魚檔查詢蒸煮時間。

Dried tangerine peel - 1 piece (soaked until softened)
Soy sauce - as needed
Oil - as needed
🟢Cooking directions:
1️⃣ Rinse the abalones lightly and bring a pot of water to a boil. Turn off the heat and add the abalones, stirring gently for 10 seconds. Remove the abalones and rinse them in water.
2️⃣ Use a toothbrush to clean the abalones, including the back, and use a small knife to pry open the shell (or leave the shells intact if desired for steaming). Remove the internal organs and mouth, and rinse the abalones again. Pat them dry.
3️⃣ Cut the dried tangerine peel into thin strips and place on top of the abalones. Bring water to a boil in a steamer and steam the abalones over high heat for 3 minutes.
4️⃣ Pour in some oil and soy sauce over the abalones before serving.
📌Note : Based on the size of the abalones shown in the video, steam on high heat for 3 minutes after the water comes to a boil. For larger abalones, the steaming time should be slightly longer. You can ask the fish vendor for advice on steaming times when purchasing abalone.
