• Ingredients
[ For the Cookies ]
- makes 7-8 sandwich cookies
□ 60g unsalted butter
□ 15g granulated sugar
□ 20g powdered sugar
□ 17g eggs
□ 2g vanilla extract
□ 0.5g salt
□ red food coloring
□ 118g cake flour
□ 7g freeze-dried strawberry powder
□ a pinch of baking powder(0.3g)
[ For the Filling ]
□ 80g white chocolate
□ 8g corn syrup
□ 28g heavy cream
□ 2 drops of cherry blossom flavoring, optional
□ 10g raspberry purée
□ 4g freeze-dried strawberry powder
□ strawberry crunch, optional
• Before you start
- Take your butter out of the fridge at least 30 minutes before using.
• Notes
- You can use strawberry puree instead of raspberry puree if you want.
- I recommend you double a cookie recipe since there is a lot of ganache filling left.
