Cherry pain brioche (with walnut meringue)
Ingredients for 3 medium loaves
500g pitted cherries (or sour cherries)
80g of caster sugar
2 teaspoons bourbon vanilla sugar
25g cornstarch
100ml of water
3 egg yolks
80g caster sugar
150g melted butter
200ml warm milk
7g dry yeast
grated lemon peel (optional)
450-500g of plain flour
a pinch of salt
3 egg whites (at room temperature)
a pinch of salt
bourbon vanilla sugar
100g of caster sugar
150g ground walnut
I baked the loaves at 180 degrees C (up-down without ventilation) for 30-35 minutes (the time may vary depending on the type of oven used)
