70 g caster sugar
2 whole eggs
70 g flour
50 g of powdered hazelnuts
Black chocolate ganache:
150 g dark chocolate
150 g liquid cream
Chestnut mousse:
350 g chestnut cream
3 sheets of gelatin
300 g liquid cream
100 g of blond grapes macerated with rum
Rum Syrup:
150 g of sugar + 15 cl of water
3 cl of rum
