This is easily on the Top 2 best dishes I've had in my life. For those idiots who say this is not chicken 65, they don't realize there is variations in Chicken 65 depending on the region they make it. I made this guy's Chicken Makni recipe too and it came out very well.

Not sure if u know this but chicken 65 got its name because it was featured from the year 1965 onwards, by Buhari hotel, Madras, in celebration of their 50 years. That's how chicken 65 got its name.

Vividua Elsaphe nooo... there was a famous restaurant which was very famous for its chicken dish. it was just called chicken (no dish name) and was under the serial no 65. so people started recommending one another to try the chicken no. 65 from that rest. that's how it got its name. that's what I heard, I might be wrong tho

refined flour is maida, in foriegn supermkts it is labeled as "00" or "0" depending on how refined it is

@1980malika when you see the chicken less bubbly it probably means that its cooked, and also when they make tapping noises if you tab the frying chicken pieces .. they are lovely and crispy then.

Hi Chef Harpal, I tried this dish today and I am very happy as It came out very good. It was not exact taste of restaurant though. I think in restaurants they add a lot more maida/cornflour to the marinade of chicken, so that it can absorb a lot more of the curd mixture. I tried cutting chicken breast with slant cuts, there are three positive results. Fibers are held together while frying. You can make thinner pieces which helps to absorb spices (esp. on marination) and cook well. It curls nicely on frying.

Chicken 65 was a dish introduced in 1965 at the Buhari Hotel restaurant [1] in Chennai by its founder A.M.Buhari. They also offer Chicken 78, Chicken 82 and Chicken 90, introduced in 1978, 1982 and 1990 respectively. Amitabh Bachchan's Kaun Banega Crorepati (Season 1), featured Chicken 65 as a Buhari invention as did Siddarth Basu's Quiz Time on Doordarshan in the 1990s.
