Today, I made chicken and lobster inspired from Chef Paul Bocuse's poulet aux écrevisses!
I paired it with brown butter veal reduction sauce along with lobster cream sauce.
The chicken mousse combined with lobster was very tasty, and gave a nice flavor & textural contrast to the cornish hen breasts.
