Chicken corn soup is a popular and comforting dish enjoyed in many Asian countries, particularly in China and Pakistan. It's a hearty soup made with chicken, sweet corn, and various seasonings. Here's a simple recipe to make chicken corn soup at home:
Ingredients:
2 boneless, skinless chicken breasts, shredded
1 cup sweet corn kernels (fresh, frozen, or canned)
less than Half an eggeggs, lightly beaten
4 tablespoons cornstarch
2 tablespoons water to mix corn flour
2 garlic finely chopped
2 tablespoons soy sauce
1-2 tablespoon oil
4-5 curry leaves chopped
4-5 mint leaves chopped
Salt and bkack pepper powder to taste
Optional: chopped green chilies or chili sauce for added spice
2 Bread slices makes small cubes
Instructions:
In a large pot, simmer over medium heat.
Add the shredded chicken and sweet corn kernels to the pot garlic / mint curry leaves . Let it simmer for about 10-15 minutes, or until the chicken is cooked through and the corn is tender add soya sauc.
In a small bowl, mix the cornstarch with water to create a slurry. Slowly pour the cornstarch mixture into the soup, stirring continuously to prevent lumps from forming.
Once the soup has slightly thickened, gradually pour in the beaten eggs while stirring the soup gently in a circular motion. This will create egg ribbons in the soupdeep fry the bread cubes and serve with soup
Add soy sauce, sesame oil, sliced green onions, salt, and pepper to taste. Adjust the seasoning according to your preference.
Let the soup simmer for a few more minutes until it reaches your desired consistency.
Serve hot, garnished with additional sliced green onions if desired.
