Diane, I do not have a word of criticism to offer! I Ioved watching you prepare beautiful meal for your family and guests! The Chicken Marsala looks delicious! Your expertise is obvious and appreciated! I learned to cook by watching/helping my mother in the kitchen. She cooked the type of food that most of us here in southeast Texas love: a mixture of southern, Cajun, Texan that satisfies the tummy. Keep the videos coming, please.

For me, black pepper goes on almost everything-rose mary rice, egg, salads, french fries, pork chop, mushroom sauce, etc. Love that black pepper.

Thank you! It is really good and very easy. Make sure to buy a good, dry Marsala as that is the glue that holds this together! I live in the country and once had to buy some domestic Marsala. Omygosh, it was horrid!! I'd rather, either, not use at all or substitute with port, sherry, madiera or even wine. Each coming from the country where they originated. Buon appetit!

It is good but make sure to get good ingredients! Worth the time to seek out some good marsala...I, personally, not fond of California marsala..Italian, like Lombardo, good way to go. It will be only as good as your ingredients!

If the clean freaks put some glasses on they would see the kitchen is spotless and other than pounding chicken and dredging it, I have no idea what they are talking about. Maybe because I am of the age that actually didn't have to use gloves. Wash your hands with water/sanitation buckets everywhere in a commercial kitchen. Garlic in the Marsala, but not much is good just not classic for the dish! Hope you enjoy!

One of my favorite dishes. Looks very good, but hand washing is so important especially with chicken. When I add the Marsala, I have always added it right into the pan... but VERY CAREFULLY, AND LOW AND CLOSE TO THE PAN. Never a problem. Good job, guess it's time for me to cook again. ❤

Well, as I've said in many comments. there is a 2 bay sink to my left. I figured people were smart enough to wash their hands. This isn't meant to be a course in sanitation. I guess i could do a video as I've been cooking for a living for over 50 years. 40 of them self employed.

At this point in your video it wasn't clear you were a pro, for there are many great amateurs out there who demonstrate their recipes well. The whole table of food looked delicious. This looks so good. I would love to try it. I have never had chicken marsala, but it looks delicious. So, marsala is a liquor? Is it wine? Sorry for what probably sounds like a silly question, But I don't drink, so I'm not sure what it is.

Questions are never a silly question .!! Marsala is a wonderful fortified wine, the best, Italian. Here is a link to take a look at a more in depth description. I'm not a fan of domestic marsala. If that's all you can get, don't use. You won't be happy with the end result. I personally like the one pictured in the link and is the one I use as its reasonably priced with great flavor! I really wish you would provide a list of hope much of each ingredient we need and the amount and the recipe instructions like a regular cook book so we could follow your instructions when we have a house full of company and don't want to try to watch and listen to a video with conversations going on. Oh for christ sake shes not in a hospital as long as everything is clean shes good there is no cross contamination of any sort if she was handling something dirty then there is cross contamination you obviously never worked in the food industry

I wasn't teaching a sanitation course. There is a sink just outside the camera angle. There was a time in restaurants where people actually washed their hands quite frequently believe it or not. I am from that era. Love soap and water. Hate bacteria laden gloves.

Believe it or not, there is a 2 bay sink within "wing span", to my right, that I use quite frequently. I chose to edit the washing of all out of video as I figured people could use their brains and know what and when to wash all....

You should wash your hands off before reaching for other things like the seasoning and such after you handled raw chicken because you can cross contaminate these objects that can make you or someone very sick when its handled again.

Mary Morin not to worry. There is a sink to the right of me. Complete with running water, hand soap, dish soap, bleach and so much more. Over 50 years of cooking, never once has anyone been sick. If you look closely at my hands, they live in water. I wasn't trying to teach sanitation, just cooking. Sorry to offend you.

Not in the "classic" Veal or chicken Marsala dish. However, make it once this way, just so you know, then change it up anyway you want and give it a new name...maybe Chicken Marsala with Garlic....Check in with Marcella Hazan if you can find one of her books or perhaps Guilliano, her son, might have in one of his. It's really quite good without the garlic...Thanks for watching!

It is apparent that your weight has affected your hip joint(s). It's called a sailor's gait as one swings the leg around to avoid total weight bearing on the affected joint(s). Get thee to the orthopedic surgeon is my recommendation. Life will be even better. BTW, making your chicken marsala tonight, so thanks...

Thanks....yes hip was the problem...1 replaced in 2004 and the other 2 years ago... I think today. I've been on standing on Kitchen, concrete floors and carrying heavy bags of whatever for 50+ years and unfortunately arthritis has taken it's toll. My weight is always an issue...I've been really thin and also swung the other way with all stops up and down, and in the middle!! LOLLL. Hidradentitis Supprative was the problem to getting both hips done... Enjoy the Chicken Marsala....easy and good with the right ingredients.

what is "Zablione" I googled and got "zabaione" and "Zabaglione" possibly a typo? The reason I'm asking is that I purchased sweet marsala instead of dry and seeking a chicken marsala recipe using Sweet. I now have sweet and dry marsala. Help?

Ohhhh My.....Zablione is a classic Italian "custard" Just the best!!!! easy to make too. Check out my "short version" video. It's sort of old fashioned, but still a classic. As far as your sweet marsala...I would use for Chicken Marsala as I have a sweet tooth. It will be quite tasty! Here is the short version of Zablione. I have a longer version that teaches a bit more "in depth". Also the Hollandaise Sauce will teach the basics of "egg yolk" sauces... Can I freeze this and warm up following week? If so, how long do I heat so I don’t overcook, at what temp, cover?

Make it up to a week before you want to serve. No need to freeze. Heat from cold, covered, extra sauce heat separate, 375 degrees, until warmed through, approx 20 minutes. Depends on how many you are trying to warm Or warm 275 degrees for longer time, covered.

I tried for way too many hours to edit the music as youtube wouldn't let me use my uncles music which is underlying the audio. I finally gave up and made a fresh copy. kzitem.info/news/bejne/0qdnv5aXj2ZmqYY I might add, that we own the royalties too! Thanks YT!!! Enjoy Yourself is the track.

I liked this video every so lightly. I would've replaced the butter at the end with some heavy whipping cream. Also where is the GARLIC ? Tsk, tsk, tsk.

I'm a classic cook. You might refer to this article or perhaps Marcella Hazan if you have her classic cookbook. (Probably out of print but her son may have published the recipe). Not all Italian food uses garlic. www.nytimes.com/2019/04/23/dining/marsala-wine.amp.html

I'm sure with or without garlic, both are wonderful. I'm with you though. I eat a bit of garlic almost daily.

To "Tweak" or "Not to Tweak," that is the question...By all means, make it as you wish, make it your own...D'une maniere ou d'un autre...As Dianne said not all Italian dishes include garlic, esp'ly Northern Italian.

@@debrahouston2884 and.....northern Italians use a bit more cream. Southern Italians use a bit more tomatoes....regional and what is "in season". Standard fare! Not many ingredients however, what is used I the best available quality!

Please read my statement. No bacteria. No one sick. I didn't realize I had to teach sanitation. Nothing was touched and not sanitzed thoroughly.

I am concerned that you touch the raw chicken and then touch everything else. You have contaminated everything. Either wash your hands before you touch the flour/S&P containers or have them pre-measured and ready to go. This is how people get sick. Think food safety.

Hi Dorothy, Thanks for your concern! Aren't you glad you don't eat anything I cook! See Side Note above, you might have missed. After 40+ years in the food service industry...I know sanitation probably better than most...Again, Thanks for your sanitation concern. BTW...just watched again...you missed quite a lot. The salt was in a container that gets washed, the pepper mill, same. The flour, after dredging gets thrown out. Everything at the side of the stove is pre-measured (mise en place)...you might take another look. After dredging...you didn't see me wash my hands but they don't have a trace of flour on them...Yes....I LOVE soap and water!..again....this is not a course, lesson on sanitation. The kitchen is beyond spotless.

UGH! The minute you added chicken stock it was an immediate FAIL! Diluting the savory flavor of the Marsala wine defeats the whole purpose of any Marsala dish!

Not if it's good Marsala. And if it's not "fortified" chicken stock. To each their own...It's really good. The Marsala comes through just fine....

Just use chicken stock. The alcohol cooks off if that's the concern.
