Thanks so much my friend, I love curry also! I get coconut cream at trader joe's, but you can also use heavy cream and it will be great. Most super markets have coconut cream though ;)

+hondafemme Thanks! Everyday during the week I have a quinoa bowl with chia seeds, yogurt, and fruit. For lunch, a big salad with either baked chicken thighs, browned bison, or grass fed beef :)

***** Nope, but basically I bring just under 2/3 cup of water to a boil, stir in 1/4 cup of quinoa, and simmer on medium-low until all the water has been soaked up, 15 minutes. Bobby, if I wanted to make this for a weeknight dinner for my family using bone-in chicken thighs, what would I change? Should I cook the chicken still separately? Or dice and cook in the sauce like a traditional curry? The sauce looks amazing!

Thanks for the sub! Great questions, here are some answers ;) 1. Yes, meal prep is something you make on Sunday, so you have 5-7 meals for the entire week. Saves lots of time when you are busy during the week, but still wanna eat healthy, tasty, meals. 2. I keep them in the fridge and they stay for 5 days no problem. You can eat for either lunch of dinner.

Don't strain the sauce!!!!! All the beautiful fibre is lost! Instead I would get an immersion blender or nutribullet and blend until no trace of bit is left! Will probably help thicken too? Just a question... can this be made with a bit of yoghurt?

Yes, you can stir in some yogurt at the end, but not too much or the tang may change the flavor of the sauce. Hand blender would work fine also, good call :)

If your curry powder doesn't have a bright yellow color, add 1/2 a teaspoon of turmeric powder, that will do the trick! Let me know how it goes :)

I always scoop out the salad and warm the rest up. It would be easier to store separately, but I do it all together for the camera. I will start telling people in videos, thanks ;)

This is great, but because it's all in one container, I have to heat it *all* up, eat it cold, or take the salad out and put in another container, so I can heat up the other stuff and have the salad cold :/

shallots or green onions work, only cook them for a couple minutes though. you can remove the quinoa salad or it's really tasty if you warm it up also. Let me know how it goes!

Hey buddy. I would bake the chicken in the sauce, and then baste the chicken every 20 minutes so the curry really gets soaked up. No need to marinate first. :)
