Pasture raised chicken has a much richer, deeper flavor than standard grocery store chicken and these chicken wings from Crowd Cow are no different. Tremendous flavor.
Start out by patting the wings dry. If you want them a bit crisper let them sit uncovered on a rack over a sheet pan in the fridge for a few hours or overnight. This will help dry the wings more. Depending on your rub you can also give them a quick sprinkle of kosher salt to dry brine them and add a bit more flavor.
Season with your favorite wing rub. I used Hardcore Carnivore Sweet and Spiceology Maui Wowee.
Fire up a chimney of charcoal and dump it in your Vortex on your kettle grill. You can also use a couple charcoal baskets shoved together in the middle of the grill but I think the Vortex gets hotter. Briquettes or lump charcoal are just fine for this.
Arrange the wings in a circle around the Vortex, cook for ~20 minutes. Give the wings a flip and cook for another 20 minutes or so. Pull the wings off and toss them in any type of sauce you want. Bachan's is great for an Asian style wing or a simple combo of butter and Frank's Red Hot will give you that classic buffalo flavor.
