I came here to say this. A laidback South American cover of Serge Gainsbourg is apperently exactly what my Sunday needed. Anyway, I tracked it down: it’s translated as “Yo Te Amo. Yo Tampoco” by Venezuelan group Conjunto Santanita. It’s here on KZitem.

I like that this shows the strength of having some things laying around so you can toss together a really strong dish. He didn’t have to whip up the salsa or sauce, he had that prepped. Awesome.

chilaquiles isn't easy to find in my state! I found ONE place that makes them, only during breakfast hours, and they were inside a indie quick mart and only took cash. I never went before I left the area :(

I gotta say I'm of mixed opinions on shorts in general but I hear they really drive the views, and this one is just beautiful. I've tried chilequilles a few times and think I'd probably like them better if they were less soggy and more crunchy. This makes me think i ought to give them another try.

Get tortillas and cut them into triangles. Pan fry them until golden brown. Now you use that instead of store bought chips.

@@lorenzofuentes3021 I live in an area where Juanita's chips are plentiful and cheap. While homemade most things are better than store-bought, I can't fathom doing better than Juanita's! Sadness, though, it's been three months since this video and I still haven't tried chilaquiles :(

@@setharnold9764Juanita’s are amazing. But for Chilaquiles, store bought chips are made from much thinner corn Pattie’s. Also… tried adding the salsa after everything else is done once ready to plate. These two variables make a world of difference for me. I can’t get with the soggy thing. Made them Kat night with Chile verde chicken instead of red salsa. Absolutely superb

About an hour ago I ran into a cooking video with the hardest, quickest cuts and the cooking noises were loud and sharp. All of it was to keep in beat with the music. It was the most sensory awful cooking I've ever seen and it was tagged as ASMR. If that video was the disease, this was the cure. And now I know how to make chilaquiles, which I was only vaguely familiar with. So a win-win!

Your recipe made me salivate...sad thing is, I can't replicate this cause the mexican ingredients you use are unavailable in my Country. in terms of spices Mexicans and Bangladeshis are very much alike... Also, I don wanna swap the mexican stuff with locally sourced similar ingredients..if I do that, posiibilty is I'll probably find similar or recipes of similar flavour spectrum already exists. Wish i had the variety of chillis you use.

I've never seen chilaquiles where the egg is fried and added on top... I usually see the egg scrambled into the chips and sauce. Is there a certain region in México that does it the way you made it? Very curious as I know certain traditional dishes are made differently state to state

Can’t believe how many chilaquiles haters there are, it’s probably a top 10 dish for me, I love it. I love the flavor of when the sauce has cooked into the tortillas, but I also love the crunch, so what I do a lot is to cook it until they are soggy, then just scoop it all up with more tortilla chips 🤌🏼🤌🏼. Not exactly the diet friendly version but it’s the best

Honestly, I prefer my chips extra crispy so I usually get a bowl of chips and then I put my salsa over the chips and then I mix it all around. I throw an egg on top some cheese that way keep it crispy.
