You teared my old eyes up, Sir. My Pop used to make, from all natural ingredients, soups, stews and all manner of dishes. We'd even butchered a hog from time to time or he'd buy a 1/4 beef. But! We also grew up hunting, fishing and trapping and he made the most wonderful meals with small game, fish, turtle, fish on up through deer, antelope and elk. I was, we were all blessed to have parents that did all that with and for us. God Bless you and yours

I'm from Western Colorado, and we have beans in our elk chili too. I like the broth a little thicker so some cornmeal or a handful of tortilla chips works great. No matter how you make the broth, it's some of the best chili you will ever eat.

I love some elk meat but I'll eat up a nice chunk of moose in the chili any time as well, we have very few elk in Alaska, I've been here 2/3 of my life, I live in Colorado the other 1/3, it was Mesa County my earlier elk story happened in and no I wasn't actually of pushing my horse but I sure wasn't trying to slow her down any😁

@@ericericson4 my story was pinion Mesa but the ranch my dad worked for had permits on the uncompaghre I've riden many miles around the mudholes and little creek basin, unfortunately we were always in the middle of fall roundup on little creek during elk season

Hug you back Kent and Shannon. Did you save me some elk chili? In Southern Ohio, we have some poor families, so beans are common in chili here. Growing up, mom always made chili with kidney beans. I've had chili without beans and I like it too. Deer chili is common here too. It's bow season here right now. I have ground venison in the deep freeze from January. Hope it isn't freezer burned. When I was a younger man, I went hiking and camping above the tree line in Colorado Rocky Mountain National Park. A memorable trip.

Was just thinking about it as you were talking about being in the Gila area... As a kid of 12-ish, our family went Camping at Diamond Rock(on the Black River, not far from Alpine) Caught Trout and one day drove down to Blue.. Really Rugged Country(esp in a 2wd). But Just STUNNING. "Barely made an impression on me" as I recall and Picture the Details some 55yrs later. 🤗Thank You for stirring that Wonderful memory🤗

I totally agree, what a beautiful sound. From central Idaho, we see them on the hill and hear them in the mornings. Nature is wonderful and to be appreciated. Especially when it's appreciated in the Dutch oven with some wonderful seasonings. Thank you for taking us camping!

I just got back from the Grand Tetons and stumbled across a Royal Elk and his harem of about 20 cows. I was the only one there and got some great pictures of him and recordings of him bugling. So Majestic!!!!! I have a Elk tri tip and was trying to figure out a great way to cook it. Chili it is !!!!!! Thanks Kent, love your videos and recipes.

While working at the Grand Canyon I bagged an elk just outside of Williams AZ. The head chef of the El Tovar went to work and we had Elk burgers, Elk tacos, Elk chili, etc. you get the idea. (Thanks for bring back the memory's)

I have used McIlhenny's Chili recipe for nearly 30 years. I have made it with beef, pork, elk, and even squirrel. This year I have made Texas Red using a different recipe and now I will have to make this one. The Texas Red was so good I swore never to make McIlhenny's again. If this one is better, I am going to go broke trying to keep up with your excellent cooking. BTW, I use your Chicken and Dumplings recipe exclusively now, as it is just like my Mother used to make with one exception, she would roll the dough flat, cut it into strips and put them on racks to dry some before we got back from Church. Makes my mouth water and brings memories of the old days 70 odd years ago.

Yep! Use those loins for elk medallions! Just flame kiss them with some cracked black peppercorns and some coarse salt on a hot cast iron skillet. I know you have a few of those! Praying to the hunting gods for safety and success on our 4th season Elk opener on Colorado in just a few weeks! Great job on that camp chili! Fantastic!

I'm soooooo glad you put beans in chili. My dad (born in Minnesota) taught me (born in Texas) how to make chili, and it ALWAYS contained beans, and I LOVE it that way. But these other southerners, boy they're particular about their chili not having beans in it, so it usually ends up a point of contention when I make my chili lol. They usually end up admitting that it's tasty, though, so I consider that a small victory. Love your show, and have shared several of your videos with family members. Keep doing what you do. - With love from Texas!

Lord have mercy. We hunt elk, on foot, in the Uintah mountains. It’s always the same. The good news, we got one down. The bad news, now we gotta pack it out two miles on our backs (over 3 days). But boy, that beautiful, lean meat is the best thing anyone ever tasted after that much effort. Good for you and Shannon for living your best possible life.

Around here in the Ft Sill impact range, we have had a large increase in elk. Wonderful lovely sight to see. Many of us leave a few items around and plant extra crops for them to flourish. When one is harvested legally, we share. The poachers are delt with swift and legally. Mikel

I’m from Louisiana and it’s always been my dream to go Elk hunting. I know I’ll never be able to afford it but watching you Sir brings it just a little closer to home. Cajuns love to cook,we love to hunt and we love to go camping. Guiding in the Gila must have been truly incredible. We cook differently but I really enjoy your recipes Sir. Being from Northern Utah most of my life, I'm loving this Wyoming series, but does make me homesick at times. We always used beans in our chili for the same reason, had to stretch out the meals.
