Super tasty cheesecake with an intense chocolate flavor and perfect consistency. The cake is baked on a cookie base. They can also be made without the bottom.
I made the cheese mass from Philadelphia cheese, but ground cottage cheese will also be great (you can also use cottage cheese from a bucket (apparently Piątnica is the best). The addition of mascarpone cheese makes the mixture even creamier and more delicate.

🔴 Base for a cake tin, diameter: 21 cm - 22 cm
• 160 cocoa cookies
• 60 g butter
🔴 Cheese mass:
• 200 g of dark or other chocolate
• 160 g eggs (3 medium)
• 100 g - 150 g of sugar (the cake is not too sweet, if you make it with dark chocolate, add more sugar 150 g)
• 300 g mascarpone
• 600 g of Philadelphia cream cheese or other cheese (ground Polish cottage cheese Ulubiony, Your Taste, Piątnica, etc. will also be perfect)
• 40 g sour cream 18%
• 1 tablespoon of cocoa
👉All ingredients should be at room temperature.
•Put in the oven (160°C)
• Pour boiling water (up to 1/4 of the sides of the springform pan)
• Bake for about 80 minutes on the lower shelf of the oven (top down).
👉After baking:
• Turn off the oven
• The cheesecake is very soft
• Leave the cake in the oven with the door ajar for 1 hour
• Remove the cake from the tin when it has completely cooled down.
• Put in the fridge overnight.
• Decorate with cream or pour chocolate icing or sprinkle with grated chocolate
• Before eating, take the cheesecake out of the refrigerator about 30 minutes in advance
🔴Chocolate topping:
150 g chocolate (milk)
100 ml heavy cream (30%)
🔴Chocolate cream with mascarpone:
• 125 g of cold cream 38%
• 75 g chocolate 52% 55%
• 125 g of cold mascarpone
• 40 g of powdered sugar
• 1/2 teaspoon vanilla extract
