Hello today I made chocolate ice cream cake.
It's more like mousse type cake.
You can skip the mirror glaze step, and have ganache instead.
I've used heart 3D mold, you can use small mousse ring.
Also, you can use any other chocolate type instead of milk chocolate which is the one that I used. If you want your cake to taste sweeter, add 30g of more sugar while whipping the cream.
I've used vegetable cream, but it's better to use animal fat cream.
The amount of whipped cream can be varied depending on what type of cream your using.
▶ ingredient
200g chocolate
150ml heavy cream
200ml heavy cream
▷ please freeze for 5 hours in the freezer
10g gelatin
200g sugar
150g water
200g chocolate
20g cocoa powder
▷ when you pour glaze on top of cake, the temperature needs to be 30 degrees
8 digestive biscuit
