In this video I'm going to show you how to make a simple chocolate sucrée dough. If you want to make it vanilla or lemon or orange, you can simply replace the amount of bitter cocoa with flour and flavor it with whatever you like the most. Sucrée dough is a light short dough, since it contains less than 500 grams of fat per kilogram of flour. It is a dough with more sugar than the others, which is why it is called sucrée, which means sweet in French. The sugar that integrates it is common sugar, therefore its texture is more granulated and not smooth like the sablée dough that has powdered sugar. It is an ideal dough to use in cakes, cookies, alfajores, or whatever you prefer.

450 gr flour 0000 (all-purpose flour)
50 gr bitter cocoa
2 gr fine salt
