A very quick and easy chow mein recipe with chicken or beef. Made from egg noodles, this stir fry recipe is sometimes also referred to as Chinese Noodles. You can alter the quantities per your taste and also use any vegetables of liking. I made this chow mein with only the essential vegetables i.e bell peppers and onions. I personally feel these are the main flavour boosters so don't omit these. Also ideally you would want to have equal quantities of noodles and vegetables but hey, what ever works.
Ingredients
- 500 gm Egg Noodles
- 3-5 tbsp Sesame Oil
- 2-4 tbsp Any Cooking Oil
- 1/2 cup Peanut (Unsalted )
- 1-2 Bell Peppers (Thinly sliced ) I used orange, red and yellow peppers.
- 2 Onions (Thinly sliced )
- 6-8 Green Onions (Thinly sliced ) Cut into Julianne Strips
- 1/2 tsp Ginger Paste
- 1/2 tsp Garlic Paste
- 1-2 tbsp Brown Sugar
Meat Marination
- 500 gm Boneless Beef or Chicken Cut into thin Strips
- 1/2 tsp Black Pepper Powder
- 1/2 tsp Garam Masala Powder or Chinese 5 spice
- 1/2 tbsp Soya Sauce
- 1/2 tbsp Vinegar
- 1/8 tsp Cinnamon Powder Optional
- 1 tbsp Corn Flour
- Salt To Taste
- 1/2 tbsp Sesame Oil
Sauce
- 1/4 cup Soya Sauce
- 2-3 tbsp Oyster Sauce
- 1 tbsp Hoisin Sauce
- 1-2 tsp Sesame Oil
- 1 tsp Ginger Paste
- 1 tsp Garlic Paste
- 1 tbsp Honey
- 1/4 tsp Sriracha Sauce Adjust the quantity depending on your sauce and taste.
- 1/4 tsp Black Pepper Powder
- 1-2 tbsp Water
Instructions
1. Marinate meat or chicken with all the ingredients and set aside for at least 30 minutes upto over night. If you find your meat is tough, add in papaya paste or meat tenderizer accordingly but add it only 20 minutes before cooking.
2. Boil pasta as per the packet's instructions but keep it under done. If the packaging says 13minutes take it out after 11 minutes. Drain and run cold water over it to make it stop cooking. Add 2-3 tbsp of sesame oil and toss till all the noodles are well covered.
3. Prepare Sauce by mixing together all the ingredients for the sauce.
4. To assemble the chow main take a wok and put it on high heat. Once hot add in a couple tbsp of oil and sesame oil. Fry ginger and garlic paste till fragrant
5. Now add in peanuts and fry till roasted. Now add in the onions and saute them for a minutes followed by all the vegetables and brown sugar. Stir and saute for a couple minutes till vegetables are cooked but are still crunchy and hold their shape. Take them out the pan and set aside.
6. In the same wok or pan again add a tbsp oil and fry the marinated beef strips. Once fully cooked add in the vegetables followed by noodles.
7. Now add in the sauce and toss everything until well combined. Cook the noodles on high heat till any water from noodles has been dried up. Turn off the heat, cover and let sit for 10-15 minutes.
8. Garnish with Spring Onion Shoots. Serve while hot and Enjoy!
