Daddy Jack is a master of his art. I love how he uses everything and wastes nothing, I mean onion skins in a stock, when you know you just know! I've been a butcher my whole adult life, and I can say those are the meatiest short ribs I've ever seen. Gotta love short ribs, but they've gotten so popular the price is crazy anymore.

Everything that used to be thrown away becomes gold, that's the way it works, from lobsters to chicken wings, on the flip side electronics and saffron get cheaper, crazy shit

The animals are bred to be huge and for ground beef- you can’t use the steaks except in Costco- burger chains, frozen food producers, etc. - this cut works because it is NOT a steak - it’s a Restaurant Depot product and served in a single portion- braised longer they shrink maybe 25- 30 percent more and look a little more reasonable as a portion
