1. Preparing the Beans: Start by washing your beans thoroughly. Then, soak them in water for a few hours or overnight. This helps to soften the beans and makes cooking easier. Once soaked, drain the water and set the beans aside.
2. Cooking the Beans: Place the beans in a large pot and add enough water to cover them. Bring the beans to a boil and then reduce the heat to a simmer. Cook the beans until they are tender. This may take about 45 minutes to an hour, depending on the type of beans you're using.
3. Adding the Corn: Once the beans are almost fully cooked, it's time to add the corn. If you're using fresh corn, remove the kernels from the cob. Add the corn to the pot and stir well. If you're using canned corn, simply drain the liquid and add the corn to the beans.
4. Seasoning the Adalu: Now, it’s time to add flavor! In a separate pan, heat up some oil (palm oil for a traditional taste). Add chopped onions, garlic, and your favorite spices. Fry until the onions are golden brown and fragrant. Pour this seasoned oil into the pot of beans and corn. Stir everything together and let it simmer for another 10-15 minutes, allowing all the flavors to blend perfectly.
5. Serving Suggestions: Your delicious Beans and Corn (Adalu) is now ready to be served! You can enjoy it as it is, or pair it with rice, bread, or even use it as a filling for wraps. This dish is not only nutritious but also versatile, making it perfect for any meal of the day.
