To give your pasties more of a chance of holding their shape, chill the filling right down first, then (as you did) chill the shaped pasties in the fridge. When you have egg washed them chill them for another 1/2 hour. Then wash again and cook in a well preheated oven at 220° to set them for 10 minutes, then turn down to 180° for the remainder.

I cooked a large piece of corned beef last night with a mustard sauce (never in my life bought the tinned variety). But have plenty left over to make pasties and I think the left-over mustard sauce would add great flavour as well. I think they'd go well with a cheesy potato bake and a light salad. Many thanks for the ideas and cheers from NZ.

Hi there, just a quick suggestion for your corned beef. Simplest way I have found so far. I use the slow cooker/crockpot. A piece of corned beef, and a 1.25 litre bottle of dry ginger ale. I do add a couple of bay leaves, but that’s the basic two ingredients. Works every time.

Many years ago I was cycling in Scotland, one evening in a wee place called Forfar when I was looking to load up on the carbs after a tough day in the rain I came upon a type of pasty in a little family cafe. Just in case you're in America and watching this, I grew up in Scotland before moving to America 15 years ago. The corned beef shown here is nothing like the corned beef you'd get at the supermarket in packets around St Patrick's day. Different thing altogether. Also, bear in mind that most puff pastry in America has sugar in it since we're yet to understand how wonderful meat pies are.

I made something like this, last Monday, but really went cheap n easy... LOL... I had made my Mom's "kapusta" (sauerkraut, rinsed, soaked and rinsed again, fried in butter with salt, pepper, grated onion) Sunday, and as usual had some left over. I had a sheet of puffed pastry left in the freezer and made a batch of the boiled water pastie dough you showed. Fried up two cans of corned beef hash, crispy, like I like it and added the kapusta to it, didn't bother with circles, cut them into squares, filled them and folded them into triangles. Made some onion gravy dipping sauce and... yum! You give me so many ideas for recipes. Love it!

My Dad was from Bradford Yorkshire and his corned beef pasties were the best I’ve ever had. He would pay a fortune at the butchers to get a large corned beef. We’d have a corned beef dinner with cabbage, potatoes, carrots and onions. Yum! Then with the leftovers, he’d make the pastry and place it on a cookie sheet. Then he’d dice up the meat, potatoes, carrots and onions. He’d wrap the pastry over it all. It was 1 giant pastie. That was one of my favourite meals. 😊❤️🇨🇦
