I grew up thinking every park had the cinder block pits. I've seen some that could handle 500 chicken halves or more.

My dad made this with the Lions club in Pulaski with bucks seasoning instead of pepper salt and poultry seasoning and Holy crap was it good I'm actually making it with bucks tomorrow for Thanksgiving instead of turkey.

Syracuse it's very similar, but it's always Buck's seasoning.

Grew up eating this every summer in Cortland helping my aunt flip the chicken and knock down the flair ups with a spray bottle of water, this is central NY right beside spiedi's,salt potatoes,Hofmann hot dogs and grandma browns baked beans. About 20 years ago I came across Big Bob Gibson white sauce which compliments this greatly. Have also seen a Steven Raichlen white sauce based on the original cornell sauce I'm wanting to try.

I grew up eating this stuff on the Eastern shore of the Chesapeake Bay. They never called it Cornell chicken but all the fire stations sold it on the weekends. Thanks for sharing and passing on the story. Super tasty stuff. I live in Hawaii and try to make this whenever I bbq chicken. Good stuff.

you cant marinate them too long or the vinegar will make the chicken mush..

it all depends on how much apple cider vinegar you use as it is acidic and breaks down proteins

@@FireWaterCooking i did it with only a tiny amount of vinegar for taste was mostly butter milk only made the chicken so tender if fell apart when cooking

I grew up enjoying this every summer in WNY. Thanks for the memories. If you marinate in a gallon freezer bag, you can just flip it when needed and save on marinade? What temp did you finish at?

I finally made this yesterday. I marinaded it for 9 hours and it was amazing, had my neighbor over and had to fight him for the last piece. I actually have another chicken marinating overnight which I'm sure will take it to another level.

This is close to Bob's recipe but lacks the egg and he used 3 Tbsp. of regular table salt, not kosher - yes it was salty but the original recipe did not specify marinating the chicken! This was a mop sauce.

Interesting. Cornell chicken was invented at Penn State. It should be called Penn State chicken.
