This creamy, melt-in-your-mouth dessert is a lighter version of the popular cheesecake! Instead of the high-calorie classic cream cheese or cream, we use cottage cheese, which is low in calories, rich in protein, and versatile. Garnish your light dessert with your favorite fresh summer fruits for a creamy, fruity, light, and absolutely amazing treat!
Instructions:
Preheat Oven: Preheat your oven to 365°F (185°C). Line a baking pan with parchment paper.
In a mixing bowl, add cottage cheese and blend using a hand blender or food processor until you reach a smooth and creamy consistency.
Add eggs, maple syrup, vanilla extract and cornstarch to the cottage cheese mixture and blend again until all ingredients are fully combined.
Prepare your fresh apricots halves by removing the seeds. Use fresh or frozen summer fruits of your choice.
Pour the creamy batter into the prepared baking pan. Arrange the apricots halves inside the batter for a nice fruity finish.
Place the cheesecake in the preheated oven and bake for 45 to 50 minutes, or until the edges are set.
Cool and Serve: Once baked, remove the cheesecake from the oven and let it cool completely at room temperature, then in the fridge for a few hours.
Cut your light cottage cheesecake into slices and serve.

1/3 cup maple syrup or any other sweetener of your choice
2 tbsp. or 15 g cornstarch
1 tsp. vanilla extract
220 g fresh apricots (or 4 units)
