Crab Thermidor
1/2 kg crab meat ( I used 2 kg mud crab but u can use sea crab also , even frozen crab meat is fine for this preparation,this quantity serves 10
Ingredients
3 tbsButter
3 tbs Sunflower oil
2 cups Onions chopped
1/2 cup Garlic minced
1/4 cup minced Spring onion
1/4 tsp Cayenne pepper
For white sauce
1/2 litres Milk
6 cubes Processed cheese
1/4 cup shredded Parmesan cheese
4 tbs Maida
Bread crumbs
Parsley for garnishing
Salt
Method
Extract the meat from crab
In a pan add butter , oil then add onions, saute until it turns brown ,then add minced garlic, once it is softened add cayenne pepper, then spring onions, saute and add the crab meat, do not add salt now , cook on medium flame until the crab mixture is thick , keep this aside
Then prepare white sauce
In a pan add butter and oil then add Maida on low flame , stir constantly until the rawness goes then , add milk ( room temperature) and processed cheese ,keep stirring while u add milk , continue this until the milk mixture is thick
Then add this mixture to the prepared crab meat and add grated Parmesan cheese, mix really well on low flame until everything blends well, check salt now and add if needed
Clean the crab shells really well and fill the crab mixture and top it with bread crumbs, and bake at 150 to 160 degrees until top part changes slightly brown in colour, garnish with chopped parsley, this dish has to be served hot , with sautéed veggies or with salad and garlic bread
