Cranberry Nut Bread
4 eggs, slightly beaten
1 cup oil
1 cup water
3 cups sugar
3 1/2 cups all purpose flour
3 teaspoons baking soda
2 teaspoons salt
2 cups orange juice
Zested orange peel from 2 oranges
2 cups Craisins
1 cup pecan pieces, optional
Preheat oven to 350°.
Generously grease two 9X5X3-inch loaf pans. Line bottoms of loaf pans with parchment paper and grease the parchment paper.
Stir one or two tablespoons of flour into the Craisins and pecans. Set aside.
In a large mixing bowl, combine the eggs, oil, water, sugar, all-purpose flour, baking soda, salt, orange juice, and zested orange peel. Fold in the floured Craisins and pecans.
Divide batter into the two loaf pans.  Bake 50-60 minutes or just until a toothpick inserted into the center of each loaf comes out clean. 
Remove from the oven. Let stand 15 minutes. Remove bread from the loaf pans and cool at least one hour before slicing. Store tightly wrapped.
