CREAM OF COCONUT
Darcy O'Neil from Art of Drink Recipe

400ml (1.7 cups) Coconut Milk
375g (1.75 cups) sugar (Cane Sugar optional)
1 Tbsp Coconut Milk Powder (optional)
Pinch of Salt
Combine the coconut powder and the sugar and mix well. To a pot add the coconut milk and the sugar/coconut mixture. Add the salt and heat gently until the sugar is dissolved. Do not boil. You know it's done when the syrup turns more translucent. The cream of coconut will keep refrigerated for up to a month.
