make the cable a closed mesh and turn ncloth pressure up but invert the gravity direction is my first thought. probably model cable straight and key frame after,

There's not enough control to better shape it. It's ok for very straight forwards, super basic movement, but couldn't be used for most things where the shape needs changing, or other objects might intersect, or the coil would penetrate itself.

It is also an example of how ncloth is not fit for doing that.
