Bhajias are these crispy fried potato snacks or can be an entire dish that resemble fritters and are enjoyed dipped in a tangy sweet and sour tamarind sauce or ukwaju in Swahili. Bhajias are very popular in Kenya and most of East Africa and have their roots from Indian cuisine which has lots of influence in the region. Thinly sliced potatoes are dipped and coated with a thin chick pea flour batter which is similar to a tempura and then fried until crispy.
My recipe has added spices for flavor and uses seltzer which makes a very light bhajia batter and gives these deliciously crispy airy potato bhajias.
